Chickity China Chinese Chicken Salad

Just whipped these up for dinner and thought I would share. A picture would make this post soooo much better, but remember me lamenting about my botched Nikon in the last post? Yeah. So no pictures.

2 chicken breasts
1tbsp. vegetable (or sesame or peanut) oil
1/2 c. diced celery
1/2 c. diced water chestnuts
1/4 c. diced onion
1 tbsp. minced garlic
1 package of ramen noodles
2 seasoning packets out of ramen noodles (chicken flavored)
1/2 c. rice vinegar
1/2 c. soy sauce
1 tbsp. brown sugar
whatever seasoning you prefer- I used Montreal Chicken, ginger, celery seed.

Heat oil in pan. Dice chicken and season. Cooked seasoned chicken on med. high until done with an edge. Add celery, water chestnuts, onion and garlic. Saute' until a little tender. Don't overcook. You want them to have a little crunch.

Meanwhile in a small bowl, whisk together rice vinegar, seasoning packets, and brown sugar. Whisk in soy sauce. Add crushed packet of ramen noodles to dressing mixture. Let sit for a few minutes before adding in chicken mixture. Mix it all together and serve on individual lettuce leaves.

Boo-yah!

This was awesome. Even my kids ate it. Super simple and ready in about 30 minutes.
