Merry Christmas!

Okay no, I am not that delusional yet. Although after the day I've had, thinking it's Christmas would be a welcome distraction. SNOW DAY. Yeah well, actually ice day. No school. Woe is me. But I digress.

I just wanted to give ya'll a little early X-Mas present from me to you, even though you'll have to do the work. It is so worth it though, I promise.

So here it is, the absolute best cheesecake I've ever eaten. Recipe stolen from Supergrandma, but I don't know where she got it, so don't sue me if this happens to be your great-great aunt's cousin's sister's nephew's recipe. Just saying.

SugarBritches Sweet-Ass Cheesecake
Crust-
2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup sugar
Pre-heat oven to 350. Combine first three ingredients, and press on bottom and sides of a 9-inch spring form pan. Bake 5 min. to caramelize sugar. (Seriously, I skip this step and get the graham cracker crust already in the damn pan. But if you want it to be purty, follow the directions.)
Filling-
2 8oz. packages of cream cheese
1/2 cup sugar
3 eggs
Soften cream cheese in mixing bowl with electric mixer (duh). Beat in sugar slowly. Slowly beat in eggs, one at a time, until mixture is fluffy. Pour filling over crust and return pan to oven. Bake for 30 minutes at 350 degrees.
Topping-
1 cup sour cream
3/4 cup sugar
1 tsp. vanilla extract
Combine sour cream, sugar, vanilla and pour over baked filling. Return pan to oven for 5 minutes or until mixture slightly bubbles. Sprinkle cinnamon and sliced, roasted almonds over top and bake another 2-3 minutes.
This is absolutely my favorite dessert ever. Well right after chocolate chip cookies. Which could totally have something to do with my waistline and that depressing post I wrote prior to this one.

  2. Sounds good... I've been trying to quit sugar for a few now. Stuff like this always gives me a hankering for baking. Thanks, your testing my will power.

    We're iced in too. I only have one, so I just had to break out the Dora. Three? I'd almost consider breaking out some Peppermint Schnapps.
