Squash Pie


So yummy with a side of steamed broccoli.
Calories: 120   Carbs: 2.7   Fat: 8.7  Protein: 7.1


2 medium squash, grated
1/2 lb sausage
1/4 onion, chopped
2 eggs
1/2 tsp salt
1/2 tsp rosemary
1/4 cup breadcrumbs
1/2 cup Parmesan cheese, divided

Saute sausage and onion until done. Drain and rinse as desired. Add squash and saute until tender. Remove from heat and add remaining ingredients, except for 1/4 cup of Parmesan. Mix well and pour in greased pie plate. Sprinkle with remaining cheese. Bake for 30 minutes at 375 or until slightly brown.
